Polylysine is a highly effective biological preservative that is synthesized by Streptomyces in the liquid aerobic fermentation. It is Gram-positive bacteria and negative bacteria, yeast, mold, viruses, etc. have a significant inhibitory effect, in addition to excellent safety, it is widely used as a food preservative.

Molecular structure

Polylysine is a homopolymer of the human essential amino acid, L-lysine, which is linked by peptide bonds formed by the α-carboxyl group of L-lysine and the ε-amino group of another L-lysine Into, the structural formula as shown

Physical and chemical properties

Polylysine as a light yellow powder, hygroscopic, slightly bitter; easily soluble in water, hydrochloric acid, insoluble in ethanol, ether and other organic solvents. The polyispirine has an isoelectric point of about 9.0 and an optical rotation of [α] of + 57.1 ° (c = 1, H2O) and an α of + 39.9 ° (c = 1, 5, mol / LHCI ).

Biological properties

1. Broad spectrum of antibacterial: Gram-positive bacteria, Gram-negative bacteria, yeasts, molds and viruses, including a variety of microorganisms have a strong inhibitory effect. Gram-negative bacteria Escherichia coli and Salmonella that are not easily inhibited by other natural preservatives still have good antibacterial activity.

2. Good thermal stability: Under the condition of high temperature (80 ℃ -60 min, 100 ℃ -30 min and 120 ℃ -20 min), it does not decompose and is not deactivated. It is suitable for adding and using in cooked food.\

3. Water-soluble: water-soluble, can spread evenly in food, the effect is good; colorless, tasteless, does not affect the nature of food flavor.

4. Wide range of applications: broad-spectrum antibacterial, pH range of use: pH2-9, well to make up for the common weakness of the role of preservatives in neutral and alkaline conditions.

5. Complex ability: with potassium sorbate, citric acid, malic acid, glycine, Nisin and high fatty glycerides, etc. used in combination, but also synergistic effect.

6. High safety performance: The human body does not accumulate in the body after eating, and some of it can be degraded into L-lysine, an essential amino acid of the human body, which is non-toxic and known as "nutrient preservative".

7. Health effects: Recent studies have shown that polylysine can inhibit esterase activity in the small intestine, inhibit the absorption of fat in the small intestine, with anti-obesity efficacy.

Application range

At present, polylysine is widely used in food preservation, such as: pastry, pasta, fast food, butter, salad, sauce, beverage, alcohol, meat products, canned food.
